Rinse and cut the celery into small pieces. Run it through the (slow) juicer, together with the apple, lemon and ginger, and done! If you don’t have a (slow) juicer, you can chop the celery and blend it in a high-speed blender until smooth.

Cut the lemongrass into small pieces. Grate the garlic and the ginger, clean the chili pepper, remove the seeds and chop roughly. Mix water, lemongrass and lime leaf at high speed in a blender. Filter the liquid into a fine sieve or cheese cloth.
